Apple Cinnamon Overnight Oats: A nutritious and delicious make-ahead breakfast made with rolled oats, almond milk, apples, maple syrup, spices, and chia seeds.

Ingredients

  • 1 cup old-fashioned rolled oats

  • 1 cup unsweetened milk of choice

  • 1 medium apple, diced (about 1 cup)

  • 2 tbsp maple syrup

  • 2 tbsp chia seeds

  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • pinch of salt

  • 1/4 cup chopped walnuts or pecans (optional)

Directions

  • In a medium bowl, mix together the rolled oats, almond milk, chia seeds, maple syrup, cinnamon, nutmeg, and salt until well combined.
  • Wash and dice the apple, leaving the skin on for extra fiber and nutrients.
  • Fold the diced apple into the oat mixture, reserving a few pieces for topping if desired.
  • Divide the mixture evenly between two mason jars or containers.
  • If using, sprinkle the chopped nuts on top of each jar.
  • Seal the jars and refrigerate overnight, or for at least 6-8 hours.
  • In the morning, give the oats a good stir. If the oats are too thick, add a splash of milk to reach your desired consistency.
  • Top with the reserved apple pieces and a dollop of Greek yogurt if desired. Enjoy cold or warm it up for a cozy start to your day!

Notes

  • – For a vegan version, use plant-based milk and skip the Greek yogurt topping.
    – These oats will keep in the refrigerator for up to 2 days, making them perfect for meal prep.
    – Feel free to adjust the sweetness by adding more or less maple syrup to suit your taste.
